Hey there! Thank you! My boyfriend (the guy in the picture) actually made them. He cut Plexiglas into a bunch of triangles, spray painted them green, then wired green LEDs in them. He even put them on a switch which was attached to the bottom of the dowels we used to keep them up. Getting them on was somewhat of a pain. We added another triangle onto the dowels which laid flat on our backs, then duct taped them to ourselves. It took a couple of tries to get them on, but in the end I thought they were pretty sweet :)
My version of Pad Thai.
A few weeks back I had myself a craving for pad thai, so I had my sister stop to grab me some from the freezer section. As I ate it I thought to myself, “I could probably make this…” And so… I did!
It’s a mixture of dried noodles from the Asian section, bangkok peanut sauce, peas, carrots, extra firm tofu, peanuts and a Chinese Five Spice powder I got for Christmas (ingredients say: chinese cassia cinnamon, star anise, anise seed, ginger, and cloves).
Heat the peanuts on medium in a little cap full or 2 of vegetable oil for a few minutes, mix the sauce, spices, peas, carrots, and tofu in a separate bowl, and boil the noodles. Add the mixture and cook for about 5 minutes or so, stirring occasionally. Drain the noodles, put them in the pan with the mixture, add more sauce and spices to taste, stir, and let it cook for 3 more minutes.
If you’re not a vegetarian (my boyfriend isn’t), you can add chicken. Just marinate chicken strips in the sauce for as long as you want. Every time I do it, I poke holes in the chicken, lather in the sauce, and leave it there for like 5 minutes. Cook the chicken on medium high until it has no pink on the inside, then cut them into bite sized chunks and add them to the tofu mixture.
I’ve made this for a bunch of my friends and boyfriend, and I have to say it’s my new favorite dish!

This month I am aiming to do something bigger than myself for my birthday. Rather than wanting presents or money or cards from friends and family, not that I was ever concerned with that, I’d like to use this opportunity to help the efforts of the World Wildlife Fund (WWF) and donating hopefully my goal of $500 or more.
Rather than donating directly to WWF, I’d like to make adoptions to the large cats that they support, namely Tigers, cheetahs, etc.
I feel very strongly about the support of animal rights and endangered species and their need for our support to keep them safe and prosperous. I feel like this is a great first step to make our contribution to assist in their survival.
So please, make this years October a great one as I turn 25, and donate whatever it is you can to help reach my goal for these animals. Your donation won’t go unnoticed and I’m sure I will find some way to repay the graciousness. Any donation is appreciated. Thank you!!
